Steps:

You cannot export individual quotes as a spreadsheet, unfortunately.

Although, you can utilise the View Quotes page to export the filtered list of quotes.

The Export can also be actioned in a CSV/XLSX format. 

You can utilise the Quote Enquiry Report by going to Reports > Sales > Quote Enquiry.

This will then allow you to select the range of Quotes that you would like to export via CSV/XLSX:
